Almond Float Recipe
1 package (envelope) unflavored gelatin
3 tablespoons sugar
1 cup boiling water
1 1/2 teaspoons almond extract*
1 cup evaporated milk
1 cup cold water
1 can cocktail or fresh fruit
Place the gelatin and sugar in a bowl and mix together well. Add the boiling water, and stir until the gelatin/sugar mix is completely dissolved. Add the evaporated milk and cold water and mix well. Add the almond extract.
Pour into a bowl or a serving mold if desired. Chill until firm. Serve the Almond Float with the canned fruit and the syrup from the can.
Serves 4 to 6
*You can substitute lemon or vanilla extract. May be prepared in advance and refrigerated (not frozen) until ready to serve
